I would like to know how old roughly the blueberry plants are from bunnings, because I have read you should let them mature for the first couple of years before picking the fruit.

The blueberry plants sold at Bunnings are predominantly small, juvenile plants, less than two years old. They might produce a few berries in the first year or the following season after planting at home, but the crop won’t be substantial. While some sources suggest letting plants mature for a couple of years before picking any fruit, it’s usually a good idea to remove any flowers and berries so the plant can focus its energy on establishing strong growth rather than fruit production. This helps set the plant up for a much better yield in future seasons.
