I am considering buying a fibreglass pot to use as a water feature but want to ensure it is waterproof after plugging the drainage hole. Has anybody had experience with this?

Welcome to the Bunnings Workshop community, it is fantastic to have you with us.
You can certainly use a fibreglass pot as a water feature, but you’ll need to make sure it’s properly sealed to prevent leaks, especially around the drainage hole.
Fibreglass itself is mostly waterproof, but small cracks, seams, or pinholes can let water through over time, so you should be prepared to seal some cracks if they are present.
The first step is to seal the drainage hole securely. You can do this by inserting a plastic plug or using a small piece of Fibreglass Woven Cloth over the hole and sealing it with Fibreglass Resin.
After plugging the hole, you could fill the pot and see how well it holds water and address this with the same woven cloth and resin as mentioned above.
Alternatively, you could line the pot with a pond liner.
You might like to check out @Adam_W's post How to create a pond in a pot. It is similar to your plan, although it uses a ceramic pot as opposed to fibreglass, which means a different type of sealant is required.
