I have a tap bonnet that just turns round and round and won't screw tight against the tiles

Welcome to the Bunnings Workshop community. In order for us to make a proper assessment, would it be possible for you to post a picture of the entire assembly? When you refer to the bonnet is it just the flange or the spindle and handle assembly that's freely turning? Once we see its current condition we should be able to make recommendations on how to repair it.
