How to remove tiles without damaging plaster wall?

Hi, I removed my tiles above my Laundry sink and the whole wall was coming off with it. I did the same in my bathroom and this did not happen.

what materials and what needs doing to fix this situation? 

if anyone could help explain it would be so much appreciated!

Welcome to the Bunnings Workshop community @KatieG. It's brilliant to have you join us and many thanks for your question about repairing a plaster wall.

It looks like the adhesive used in the laundry was better bound to the plasterboard than in the bathroom. Destroying the plasterboard behind tiles when removing them is a fairly common occurrence. 

You'll need to cut back the damaged plasterboard and create some squared off sides. This will make measuring and cutting out a repair panel to suit easier. Try to cut back the sides to match up halfway over the stud work. This allows you to have the perimeter of the repair sheet supported. You'll need to nail in some supporting timber for the top and bottom. Once this is in place, you can apply some liquid nails, cut your new plaster to size and insert your repair piece. Afterwards, you'll need plaster tape and compound to repair the joins. I've created some renderings for you below to illustrate the process better.
