Can you cut a Stein 600 x 750 splash back in half

The Stein splashbacks are made from toughened safety glass and can not be cut down. You might like to check out the Stein website to see if any other available sizes suit your needs. If there is something that suits your requirements, you can see the helpful team at your local store's Special Order desk to place an order.
If you were after an odd size, you'd have better luck trying to cut down a polymer or acrylic splashback which could be done with a fine-toothed jigsaw
