Weeds are building up between backyard slabs. What kind of material should be used to fill the gaps?

I'd recommend you dig out the grass/weeds and any soil within those cracks and fill them up with Sikaflex 11FC. It's a flexible adhesive filler that's perfect for expansion gaps but will seal them so no weeds can grow.
