I'm ready to form up my bath and shower surround,
Walls:

For waterproofing, I've usually used:

For the tape I usually use a mesh, however I see Butyl tape is also used. As I will be tiling, wouldn't the mesh bet better? Thinner profile?

Using a mesh is the preferred method when water proofing. However, before you begin, I suggest checking your local council's rules and regulations regarding water proofing. It might require you to engage the services of a certified trades person to apply the waterproofing as they will need to sign off on it.
In regards to your choice of wall and floor liner they should work nicely.
