How to set the foundation up for pavers?

I'm planning to lay stone paver in a square area similar to the photo below.

Some questions:

Whay sort of paver type is this exactly? Stone, procelin or something else?

Lets say I fix up and clean up the ground, level it up and the surface is just dirt. Can I just put the mortar on and lay the paver on top?

The paver looks like the Tuscan Path 600 x 400 x 20mm Sand Porcelain Paver. There are a number of pavers close to the size that I've mentioned. I strongly suggest visiting your local store and checking out the pavers available. This will give you a better idea of their size and texture. Plus, you'll be able to tell what is in stock and what needs to be ordered.
