How to stick melamine to acrylic?

the breakfast bar behind the sink is showing water damage. I have tried to carve out the damaged particleboard, filled it with builder's bog and painted it. The water damage is still showing. 

I'm thinking of gluing a piece of acrylic as a splash back but I'm not sure what the best glue would be.

Thanks for sharing your question about your breakfast bar. Would it be possible for you to post a photo of your breakfast bar? This will give our members a better idea of what the damage looks like and how you are planning on installing your splashback. We can then make recommendations on what adhesive to use.
