My Hot water tap is seized and the cold water tap leaks. Both have ceramic disks.
What do I do with the seized disk in the hot water tap?
And do I replace the ceramic spindle only in the cold water tap?

Welcome to the Bunnings Workshop community. It's sensational to have you join us and thanks for sharing your question about your tapware.
I suggest having a look at this guide - How to replace a tap washer. This will give you a general idea of how to repair your tapware. In step 4 you'll see how the spindle is removed. However, in your situation you'll need to replace the entire spindle with a Shaw & Mason Chrome 1/4 Turn Clockwise Ceramic Disc Basin Spindle or similar. Ceramic spindles can't be repaired as there are no spare parts for it.
