Hi - wanted to ask if these DTA niches are able to be cut to size, I.e they are 100mm deep, Can I cut to the ~80mm depth I would have available? (Bathroom has 70mm x 45mm studs)

I spoke with the team at DTA wh,o have said that it is physically possible to cut them back by 20mm, but they would not guarantee its integrity if you were to do so.
Assuming you take caution while cutting it to ensure the fibreglass lining does not delaminate from the polystyrene core, then follow all waterproofing measures afterwards, I can't see why it isn't possible.
You would just need to be aware that you would do so at your own risk.

Thanks Jacob - really appreciate you confirming with the manufacturer and understand their position on it. I’ll consider my options keeping in mind it wouldn’t be guaranteed if cut to fit.
