I am trying to connect my washing machine pipe to this. I can drill out the barb and attach the hose but my question is can I block the top part (in Red) to prevent water going everywhere. Are there caps available?

Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about your sink trap.
I propose using either a Philmac 2" BSP Pipe Plug End which is equivalent to 50mm or the Philmac 1 - 1/2" BSP Pipe Plug End which is equivalent to 40mm. Just make sure to use FIX-A-TAP 12mm x 8m Blue PTFE Thread Seal Tape to prevent leaks. My best advice is to measure the top of the trap to make sure you get the correct size.
