how do I take care of these plants

Welcome to the Bunnings Workshop community, it is fantastic to have you with us.
That looks to be a variety of agave plant and all in all it looks reasonably healthy to me. The spots look like something was spilled or sprayed on it by accident, so I wouldn't worry too much about them.
