Covert Shed to Granny Flat

About to convert shed into Granny Flat. Paying trades to do plumbing, electrical. Want to do as much of the rest myself as possible.  Never done anything like this before. Any suggestions for what to do first. Shed already has electricity and fans.  Its a steel colorbond style shed. Insulation in roof needs replacing. Walls not insulated.

Sounds like a fantastic project. It would be great to see some photos of the shed - I'm sure it would really help Workshop members to get a better idea of what you are working with and what needs to be done.
