I am looking for a easy to set-up pop up Gazebo/Marquee.
Ideally, it should be able to host around 20 people and be easy to set-up by one person. Needs to be water proof and completely shielded as it is a wet weather option.
Any recommendations?

I'd suggest the Marquee 3 x 6m Non Permanent Party Pavilion Gazebo is likely the best option, although it would be relatively tight with 20 people, so you may need to get two.
Alternatively, you could grab a few of these OZtrail 3m Hydroflow Anti Ponding Non Permanent Gazebos with OZtrail 3m Solid Walls to close them in on however many sides you need.

I looked at the Marquee but it is not robust enough.

Unfortunately, outside of what I've already mentioned, options that would meet all of your requirements are fairly limited.
The only other option I could find is this Shelter Logic 3 x 6.1m White Portable Carport, which could be paired with the Shelter Logic Enclosure Kit to create a relatively enclosed space.
If this does not fit your requirements, you may need to look at an events hire company for something like a marquee tent.
