You'd have to check the specifications for the specific barn door track that you are planning to use as it will give details on the specifics required for that system.
In saying this, there is a solid timber frame that runs around the perimeter of these doors, and these door track systems are typically designed for doors that are 35-45mm thick, so I can't see why it wouldn't work.

yes would be similar track system, maybe not that exact one as it’s $$$ compared to a few others I’ve seen.
What hinges would you suggest to join the doors together? It’s for a bathroom so minimal gap would be ideal.
They will be replacing a standard door, so yes leaving door frame.
Again, I would check the specifications for your door track system to see if they have any recommendations, but usually some standard hirline hinges, which are also referred to as fast fix hinges, would do the trick.
