My weekend project is to restore a sun-damaged Rimu bookcase. The faded areas are patchy but I plan to sand all surfaces.
My questions are: what product(s) should I use to return the timber to its natural tone and resist future UV sun damage?

Rimu comes up beautifully with a bit of care.
After sanding back to an even finish, you’ve got a couple of good options depending on the look and level of protection you’re after. You could go with a clear varnish like Cabot’s Cabothane, which will enhance the natural tone of the timber while providing a durable protective coating, including resistance to UV and wear. This tends to give a slightly richer, more finished look.
Alternatively, you might prefer a more natural finish using an oil such as https://www.bunnings.co.nz/gilly-s-250ml-100-pure-tung-oil_p0329965 . This will nourish the timber and bring out its colour without forming a hard film on top. It’s easier to maintain and reapply over time, though it won’t be quite as hard-wearing as a varnish.
Whichever option you choose, make sure the surface is well sanded and clean before applying, and consider placing the piece out of direct sunlight where possible to help minimise future fading.
