I was wondering if anybody had any ideas on how to plaster a narrow gap about 5cm between two door frames at a level of the wall insteas of the door frames.

In that situation it will need to come out roughly to the thickness of your finished plaster coat so it sits flush with the rest of the wall.
Instead of trying to squeeze in 10mm plasterboard, you can go straight over the brick with a hardwall plaster. That works really well for narrow gaps like this where there isn’t enough room to fix sheeting properly.
Just make sure the surface is clean and lightly dampened first, then build it out in layers if needed to get it nice and level with the surrounding wall. Once it’s set, you can skim over the top for a smooth finish to match the rest.
Much easier than trying to force board into a tight space.

There are 2 ways to finish this but both require a mortar first coat like the one we can see on the nearby wall, followed by a white topcoat.
The first is the lazy builders way which I have seen on many new builds and that is to fully fill the gap and shape it so that it seems like it is all one frame.
The other is to painstakingly fill it using something like a wallpaper scraper getting it as flat as possible then when it's dry, sand it flat filling dips and resanding as needed.
