I need to remove the kitchen mixing tap to replace a corroded flexi hose. There isn't enough room to access the mounting nut under/behind the basin with a wrench. How do I get it off?

Generally speaking, the hot and cold hoses must be removed along with any other hoses that are present so that you can technically get access to the mounting nut. But looking at the assembly the receiver for one of the flexi hoses has a brass adapter fixed to the bottom of the threaded hose. This may need to be removed so that you can access the mounting nut.
Due to the increased complication of the installation, I recommend getting a licensed plumber to disassemble your tapware hoses for a proper repair. A licensed plumber can install and modify the connections so that there will be minimal twisting of the hoses. This not only provides a longer-lasting fix but also ensures the work is compliant, warrantied, and better aligned with insurance requirements.

Yes it's definitely the brass adaptor that's in the way. It's just an issue getting anything into the tight space to remove it. The hot and cold hoses are easily removable at the source - really keen to try to sort this myself.

Unfortunately, anything more than replacing a tap washing is considered plumbing work requiring a licensed plumber. You'll probably find that your plumber will need to use a tool designed for tight access, like an https://www.bunnings.com.au/irwin-telescopic-basin-wrench_p0097874 .
