I am getting external bayonet installed at a new build but I don't really like them …
can I get an electrician to simply replace with something like this? Or is more work involved?

That would be a great question to put to the electrician completing the installation, as they’ll be able to confirm exactly what has been allowed for in the wiring and mounting setup.
That said, in most cases replacing an exterior batten or bayonet fitting with a standard exterior light fitting is usually quite straightforward for a licensed electrician. If the wiring is already in place, it may simply be a matter of swapping the fitting over to the style you prefer.
Depending on the fitting you choose, there may occasionally be some additional work involved, and therefore cost, but generally it shouldn’t be significantly more complicated than installing the original bayonet fitting. Please let me know if you have any questions.
