my matte floor tiles are shiny in places from using regular floor cleaners. Can you please recommend a method and suitable cleaner please?

It sounds like the matt coating on your floor tiles have worn out or the mop/broom you are using is producing a scrubbing effect that is polishing the surface of the tile. I propose looking at using - https://www.bunnings.com.au/selleys-750ml-complete-clean-multi-surface-floor-cleaner_p0443243 , https://www.bunnings.com.au/peerless-jal-1l-versadet-neutral-floor-cleaner_p4466218 and https://www.bunnings.com.au/long-life-2l-general-purpose-floor-cleaner_p4460495 as alternative cleaning products.
As for the cleaning implement, I suggest the - https://www.bunnings.com.au/sabco-supadry-spin-mop-bucket-gen2-with-bonus-refill_p0375272 or the https://www.bunnings.com.au/sabco-rinse-n-wring-gen-2-microfibre-mop-set-with-bonus-refill_p0458953 as these have soft heads and will not scrub the tile surface too harshly.
If the polished surface continues to spread, I suggest speaking to a professional about recoating your tiled surface with a matt sealer.
