Bathroom has a sliding door but it leaves a gap that can be seen through. I'd like to add a privacy strip onto the door but what product should I attach? The door is not flush with the frame, thus the strip needs to be flexible. The strip needs to be at least 3cm wide - maximum 6cm wide. And can be up to 2060mm high. Preference would be for a white flexible strip.

Being a sliding door, movement is the main issue with anything used here.
My suggestion would be to use a brush seal, which is designed to allow for movement, while still blocking vision as well as things like dust, insects and draughts.
Based on the gap between the frame and the door, I would suggest using this https://www.bunnings.com.au/moroday-6-x-7mm-x-5m-black-mws8-self-adhesive-brush-seal_p0127883 applied along the frame here so the brushes just touch the face of the door -
They are super easy to install. Just give the surface a quick clean to remove any contaminants that could affect adhesion, dry it off, then stick the seal on using the adhesive backing and trim it to length.
Unfortunately, I've only ever seen brush seals with black brushes, but functionally, they are the best thing for this job.

You can get brush strip in white, ask the special orders team in your local store. Example below
