Hi! Does anyone have any suggestions on how to drain out both our bathroom sink & shower by any chance?
Water moves extremely slowly in both, and I'm not quite sure how to safely remove both of them so that I can clean / snake it without breaking it

Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about clearing your drains.
For the first photo, I believe that it is a twist to open type of drain cover. I suggest using a Philips screwdriver and inserting it into one of the holes and twisting the top in an anticlockwise direction. This in theory should unlock the top allowing you to take it off. For the second picture, it is a pop-up basin, and the top can be taken off by twisting the silver cap cover anticlockwise as well. Please remember not to apply too much force on the waste covers to prevent damaging them.
Once you have the covers off, I suggest using https://www.bunnings.com.au/drain-clean-2l-hair-unclogger_p4460031 if you suspect that it is hair that is clogging up the waste. For tougher blockages, I recommend https://www.bunnings.com.au/easy-off-1l-bathroom-gel-drain-cleaner_p0444579 . Please make sure that the chemicals have fully drained away before you attempt to use a snake auger in the drain.
