I'm planning to use 33mm Brown Acacia laminated board for my kitchen benchtops. What would I seal it with once installed?

If you wish to keep the colour of the benchtop as close as possible, I suggest looking at the https://www.bunnings.com.au/cabot-s-1l-satin-clear-benchtop-timber-finish_p1520590 . But if you are looking for a stain, I suggest visiting your local Bunnings and having a look at the stain and varnish sample board to give you an idea what the stains look like when applied to timber. An example of stained varnish is the https://www.bunnings.com.au/cabot-s-1l-jarrah-stain-water-based-stain-and-varnish_p1520327 . There are other brands available in the store and come in different stain colours.

My best advice is to seal the benchtop on both sides and around its edges before installing it permanently in your kitchen,
