Can you install S Fold Sheer Curtains track on the top of the window trim timber/architrave instead of the wall plaster as I can't locate studs and don't wish to hide the whole area behind the curtains .

Yes, in most cases, you can install an S-fold curtain track directly to the timber architrave. I'd suggest installing the track on the face, rather than the top, as that could split the timber.
Typically, the architrave is fixed over and into the wall framing around the window opening. I'd recommend using screws 60mm long, which would be enough to pass through the architrave, plasterboard and into that framing behind. That way, the curtain track is secured to the structure rather than relying solely on the architrave itself.
If the track is fixed only to the architrave using shorter screws, there's a chance that over time the weight of the curtains and repeated opening and closing could pull the architrave away from the wall, particularly if it was originally installed with fixings that were only intended to hold the trim in place.
