I am wanting to know how to widen the existing oven cabinet fascia for my new oven - it needs about 5mm off each side of the width and length.
What would let me take off that amount of material cleanly and accurately?

If it's just the cabinet fascia that needs trimming, a jigsaw would likely be the easiest option. I'd recommend clamping a straight edge or fence in place so you can run the jigsaw's base plate against it for a cleaner, more accurate cut.
Can I ask whether the new oven has an outer trim or lip that will cover the cut edges of the fascia, or will the cuts remain visible? Many built-in ovens have a flange that conceals the cut line, which makes this type of modification much more forgiving.
If you could also share a couple of photos of the cabinet and your existing oven, that would allow our members to provide more tailored advice.

I updated my original post with an image for better reference - I am aiming for a 'proud' style fitment where the lip will cover the edges. The oven purchased is an electrolux EVEP6515DF.

If the oven has a lip that will cover the cut edges of the fascia, that gives you quite a bit of leeway. For example, if you need to remove 5mm from each side and the oven's trim overlaps the cabinet by around 10mm per side, then as long as you remove the required 5mm, the cut line doesn't need to be absolutely perfect. Even if it wobbles slightly, it should still be completely concealed by the oven's trim.
Are you familiar with using a jigsaw? With a straight edge clamped in place as a guide, it's a fairly straightforward job. If you haven't used one before, you could enlist the services of a handyperson as it would be a quick and easy job for them to do. Here's a handy guide: How to use a jigsaw. Mitchell

I will tape up, mark it out, put on a fine tooth blade along with a straight edge.

If you are taking 5mm off all 4 sides of the opening (I would refer to that as width and height not length) then instead of trying to take 5mm off the botton, would it be better to take just 10mm off the top and leave the bottom. Reason is, you would also have to take 5mm off both those support pieces too and if they were glued in place it could get tricky. Check there would be no problem having the oven 5mm higher before committing though.
I think 10mm off the top will make it easier, was just trying to keep it looking fairly centered on the width instead of going too much to one side on the left and right.
The supports have some screws in them so could be an option.
One other thing to bear in mind @Booki, aside from physically getting the oven through the opening, is that you'll also need to ensure the cabinet cavity behind the fascia complies with the installation requirements. The installation instructions will specify the minimum internal cavity dimensions and clearances required for ventilation. So, it's worth double-checking that the cabinet is deep, wide and tall enough internally to accommodate the oven while meeting those setback requirements.
It looks like it needs a 20mm deep gap along the whole width of the oven - there is an existing gap, i will have to cut out more. Was going to get my multi tool in there hopefully and cut out the pieces that are left.
