I have purchased a property and have just became aware of previous water damage. The door frames are made out of metal (steel or aluminium) and have rusted away at the bottom. Is there anyway to remove this damage and repair, without having to replace the whole door frame?

I'm sorry to hear that your door frame has rust damage on it. Looking at the photos you've shared, I'm afraid that it is past regular patching or painting repairs. I recommend engaging the services of a steel door frame repair specialist that is close to your area. You can also post the job on Airtasker or Hipages, my best advice is to look at their references in order to see their past work.
