My little nephew helped me design some herb plant markers. Is there something I can spray them with that would protect the drawings from the rain and sun, but not add anything harmful to the soil?

What a fantastic little project for you and your nephew to do together. I'd recommend applying a few light coats of Rust-Oleum 298g Satin Clear 2X Ultra Cover Spray Paint to preserve those designs for many years to come.
Once the spray has dried nothing will leech out of it that is harmful to the soil.
