I want to add three shelves (same as in pic ) in this in-built closet. I live in Wyndham Vale, does the Manor Lakes Bunnings provide the wood-cutting service?

Bunnings Manor Lakes does have a timber cutting service. It's not a precision cutting service, so if you need an exact size, it might be best to do that cutting at home. I would encourage you to speak with our team at the store and they'll be able to let you know if they can cut it to your required measurements.
It appears that the current shelf sits on a baton that runs around the walls. Something like the https://www.bunnings.com.au/hume-67-x-12mm-5-4m-dar-white-mdf-primed_p8470119 would be suitable. You'll need to locate the studs with a stud detector to screw the batons into. Here's a helpful guide: How to use a stud finder. I'd recommend using at least 60mm timber screws.
