I want to fill the gap behind the basin in the bathroom, what is the recommended way to do it nicely, what materials do you recommend?

Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about your bathroom basin.
If you are thinking about covering the gap behind your sink, there are several options you can explore. First is to use an aluminium channel fixed in place using tile adhesive. You can then use silicone to fill in the smaller gaps that might form around the aluminium. Next is to have a look at using the PVC "U" channel. It will be easier to handle but is much more difficult to keep in place. You'll need to form a filler first using tile adhesive and then use contact adhesive to keep the PVC in place. Again, you'll need to use silicone to fill the tiny gaps around the PVC.
My last suggestion is to use any leftover or spare tiles you might have. I suggest cutting strips at the appropriate size and using tile adhesive to stick the tiles in place.

My solution is similar to @EricL. If the gap is 25mm or less then you could use off the shelf aluminium square tubing. If not you could get the actual size made up in white from the special Bunnings orders desk. failing that the local plumbing supplies. Silicone this into place, then use a white bathroom silicone along the edge where it meets the vanity and tile wall.

My first suggestion was going to be use some square piece of plastic as fill, glue the plastic down and then fill the gully with silastic. The last photo changed my mind as it looks like a resonably wide gap. I wonder if you could find a local bench top cutter and see if they have an offcut that would sit maybe half as high as your tap? To form a mini splashback effect. You could then use the white silicone to seal the edges.
Or one long tile that fits the same height with the tap, mounted against the tiles on the wall?
