I cannot work out how to get this drain open.
There is a screw in the middle but it is under the grate 🤷♂️🙈🙈
Any advice would be great.

Welcome to the Bunnings Workshop community, it is fantastic to have you with us.
The screw you can see beneath is unlikely to have anything to do with the grate; it is usually used to attach the whole waste assembly to the pipework beneath. I would not touch this screw.
Usually, the grate just screws in place. You should be able to put a screwdriver down through the grates and rotate it anti-clockwise to remove it. Check out step 1 in How to unclog a blocked shower drain to see an example of this.
If it is bound due to sediment buildup, soaking it with CLR Ready To Use Calcium Lime Rust Remover can help break up the sediment which can help with getting it moving.
