Have this old laundry taps, would like to change them to a mixer tap, is taking off the tiles and redo the plumbing my only option? Or someone knows a new product in the market that I can use?

That’s certainly an interesting setup. Because of the spacing of the outlet pipes on the wall, I’m not aware of any product that would let you run a mixer tap with the current configuration. The most straightforward solution would be to have a plumber pick up the water lines beneath the sink and run them to connection points directly under it. This would allow you to install a mixer tap in the centre, where the chrome blanking cap is. To restore the look of the splashback, you could either fill the old water outlet holes and try to colour-match the tiles, or take the opportunity to re-tile that section for a fresh finish.
