I am wanting to replicate this feature.
I have left over bricks so I am thinking to build a "brick box", waterproof it, the use render to create texture? I am wondering if this would work and what materials to use to waterproof the brick

This definitely appears achievable with your leftover bricks. Since bricks and render are porous, the key is to create a proper waterproof barrier before applying any finish. A good option is to coat the inside with a pond sealer, applied in several coats to make it fully watertight. Once the inside is sealed, you can render the outside of the brickwork to achieve the textured look you’re after. This way, the bricks provide the structure, the pond sealer ensures it holds water, and the render gives you the clean, stone-like finish.
