Roughly how big are the trees you are looking to protect? Also, can we get some photos showing the area around your fruit trees?
The typical method for protecting fruit trees is to cover them with Anti Bird Net, which would require some kind of framework around the tree to attach it to. This can be done with things like star pickets and hardwood stakes.
If we can have a look at what you have around your tree, we can certainly have a look at how best to install the netting.

We have chickens and although they are safe inside their shed sitting inside a fully enclosed fox proof chicken run I still did not want Mr. Fox prowling around and upsetting the ladies.
So I made a pest deterrent and name it Garden Sentry.
(Motion activated impact sprinkler)
Also used during the day to protect our veggie patch.
You can buy the same thing from Bunnings to protect your fruit trees like the Sureguard Scarecrow Motion Activated Water Spray Animal Repellent - or similar.
