I've purchased some laminate flooring with attached underlay to replace carpet in 3 rooms in my house. Do I need to purchase any plastic sheeting to protect against moisture or can I lay it directly against concrete?

Yes, it is best to lay down Builder's Plastic prior to laying your laminate flooring, as water can rise through the concrete and cause damage to the flooring. Lay it down, tape the joins and secure it in place with GRUNT 48mm x 30m Builders Film Joining Tape.
This will give you peace of mind that your flooring is protected and will be covered by the warranty.
You might like to check out How To Lay Laminate Flooring for some guidance on the installation process over a timber subfloor as opposed to concrete. The process is the same, although they don't need to lay the plastic down because it is not concrete.

Thank you! Can I clarify if I should only use the builders tape to join the strips of sheeting together (for example i need 3m wide and will have a 2m wide sheet so will need to tape another 1m of sheeting to it) or should I also tape around the edgrs of the plastic sheeting (so the borders of the room where the concrete will meet my skirting boards) to keep everything secure and in place?

It's not necessary to tape the edges of the plastic sheeting as the laminate floorings weight will keep everything in place. It will be necessary to tape another sheet to the 2m wide sheet you already have in order to cover the entire flooring area.
