I'm planning to build a work desk with flip top vanity mirror.
Can you please suggest on how to chose correct hinge (doesn't go beyond ~110 degrees) and gas struts (soft open/close with stay) for the lift/flip-top design?

Welcome to the Bunnings workshop community @vikkhul. It's fantastic to have you join us and many thanks for your question.
The most basic option could be to use a Prestige 131mm Lid Support Stay and a piano hinge. You might also be able to use the Kaboodle Slimline Cabinet Hinge Pack depending on how thick your desktop is. Here's an easy to follow step-by-step D.I.Y. tutorial on How to install door hinges and gas struts which I trust you'll find useful.
Let me mention some of our experienced woodworkers @woodalwaysworks, @r23on, @Poppop. to see if they have some other suggestions.
Please let me know if you need further information or had any questions.
