Ive got a gate with slats that I would like to cover. I was wondering what would be the best way? Dowels or battens on the gaps? Or just panels over the back to block out?

All of the options you’ve mentioned could work — it really comes down to the look you want to achieve and how much effort you want to put into it. Installing dowels or battens between the gaps would give a more detailed, custom finish, but it would be a bit more time-consuming. If you’re after a quicker, more straightforward solution, cutting sheets of HardieFlex to size, painting them to match, and fixing them to the back of the slats would probably be the easiest way to block everything out cleanly.
Another option could be using EkoDeck Castellated panels.
