We have this little corner of our backyard which abuts our house where the pavers slope down into the drain. I'm concerned around water pooling in this area.
I know we could lift the tile and pack it with sand, but how can I also level off the drain? Is there something I can use to extend it a few cm, so everything could be level?

Just a friendly reminder that any plumbing works must be carried out by licensed plumber for safety and compliance.
I propose speaking to your plumber and having an Everhard EasyDRAIN Polymer Grate And Floway Pit installed and replacing your standard above ground drain cover. The Floway pit must be cut into the paver so that they are at the same level, in this manner any water flowing towards it will be directed away. Plus, because it is at the same level as the paver any sitting water will flow into the drain as well unlike your current drain cover.

Can you post a few more photos standing back so we can gauge the overall lay/fall of the pavers.
I think you can DIY that without crossing the boundary into licenced plumber territory.
