I think it is the water not going straight into the drain, which goes to bricks washes the sand away. The drain position isn't great either. How do I fix this?

Thanks for sharing your question about your brick paving.
It appears that the overflow coming from your down spout spreads right over the paved area. This excessive amount of water has started to eat away at the paving foundation causing the pavers to change and shift positions. If you were to lift the pavers now you might be surprised to see that there is no more sand or gravel left underneath the pavers.
I propose engaging the services of a plumber to change the direction of your down pipe and have it go straight into the drain or install a larger pit with the down pipe pointed inside the larger pit.
Once the drain has been addressed, this would be the best time to lift your pavers and fix the eroded foundation underneath. Once the sand and gravel foundation has been fixed you can then re-lay the pavers and use a strong traditional filler such as sand and cement.
With the repairs in place, you should not be getting anymore overflow from your downpipe.

All my downpipes are not directly going into the drain. Do you think I can just cut a portion of the downpipe so it would directly go into the drain? And maybe adding this Icon PVC 95 Degree Square Elbow Downpipe ??

It might be possible to install the Icon PVC 95 Degree Square Elbow Downpipe. I would suggest measuring the downpipes measurement and matching it up to the elbow. If it does fit, please keep in mind that it might not resolve the overflow issue especially if the pit is not big enough to accommodate a strong downpour.
