How to revive newly laid Kikuyu lawn?

I planted lawn 3 weeks ago from Bunnings. It was quite yellow when purchased however after watering twice a day for the first two weeks it was looking good. I went away for 6 days and Kay had retic watering it once during that period and have come home to a dead lawn - not sure what to do

The weather over those six days would be useful to know, as newly laid lawn needs frequent watering—ideally at least once per day in warm or hot weather while the roots establish. If there were a few hot days and it was only watered once during that time, there's a good chance the lawn has suffered from lack of water.

At this stage, I’d recommend applying some Seasol and returning to daily deep watering. You might find that the lawn bounces back with consistent care.

I also wanted to touch on the fact that the grass was quite yellow when you purchased it. Freshly cut and delivered turf should be vibrant and green, not yellow. While the lack of watering may have contributed to the issue, it sounds like the grass may not have been in the best condition to begin with. It might be worth speaking with a manager at the store where you purchased it and explaining that it was already yellow at the time of purchase and has now perished. I trust they'll do their best to help resolve the situation.

You could say that it was a watering issue. But to say that it was overwatered would mean that at some point during the six days you were away, there could have been a large downpour of rain which would mean that your lawn was given too much water. Or the opposite could have happened and that there was intense heat during those six days and your reticulation system did not provide enough water for the lawn. If you could account for the weather for those six days you were away, you'll get a better picture if your lawn got too much or too little water.

I suggest giving Mitchell's recommendation a go, as there is always the possibility that the lawn might recover.
