I've purchased the westbuild mortar mix. I'm confused whether I need to add additional sand or not for pointing between pavers. Some sources say yes, others no.

Mortar is not the best choice for filling gaps between pavers as it is inflexible and prone to cracking with ground movement.
You would be better off returning your mortar and using a polymeric paving sand.
It’s made from a blend of fine sand and polymer additives that bind together when activated with water, forming a stable, semi-rigid joint. It will flex and move with the pavers without cracking like the mortar will.
