Hey all - what is everyone cooking up this weekend? I'm thinking it's ribs, probably pork, although lamb ribs are pretty on point to smoke at the moment.
What's on your grill or smoker?
@MoonshineBen we're doing a Woolies pre marinated Beef Roast on the slow cooker. No smoker or grill, but it'll be great.
I hope to convince Tania to get a nice big cut of beef from our local butcher, & I'll shop for a couple of your rubs. 😀
Didn't fire up the BBQ at my place on the weekend, but do have a pork shoulder planned for next week. Settled for some crispy chicken tacos which were delicious!
Hi all, what's everyone cooking up this weekend?
We've got some friends coming from interstate, so I'll be hitting the smoker early with this Yellow Curry Pork Neck.
It so dead easy (recipe over the Moonshine BBQ blog), basically a simple yellow curry paste mixture smoked for 6 hours, which gives an insane crust, tenderness and an absolute flavour bomb. There's also a pretty simple sauce to go with it.
But I want to hear what everyone else is cooking up - hit me with it!

Nothing too fancy at my place, but I did some cajun-spiced chicken on the barbie last night to add to a caesar salad which was yummy.
Nothing fancy this weekend @Jason, had a few things on, so no smoking. But next weekend tackling a brisket!

Smoked up a storm on Monday (took the day off for this beauty). Keep it simple with a salt, pepper, garlic rub for the cook, then basted in a special BBQ sauce. It was spot on. Don't know where the flip my pics of it cut up have gone though - can't even show of the beauty of the smoke ring and the juicy goodness.

Got a bit busy on the wknd with a sweet spiced rolled pork shoulder, jalapeno poppers and completed the smoking (and of course eating) phase of making my own bacon following @MoonshineBen's method. Legendary!

Thanks @Jackson. I used a rub from another great team on the comp circuit, Suck Knuckle smokers, it was a really flavourful chicken rub. Generally I use the Moonshine BBQ rub.

@MoonshineBen The bacon is bang on mate. Bit too salty but I'll adjust for next time. Flavour is incredible though. Definitely need a nicer/thicker piece of belly too, this one so thin.

Hey @Jason, yes, just some quick chicken this weekend, but turned out amazing. Hit it with some apple smoke and blend smoked honey to finish.
The last minute, Sunday supermarket hot chicken find was a disaster, it was tough, dry, & the flavour tainted by it being incinerated, verging on cremated, but I pretty much rescued some today.
I removed the skin, then torn off some chunks of breast meat (thinking that if I can make that edible, then the rest will be a breeze), put it into a Grab-It, auto reheated it in the microwave for longer than normal (I always intervene), kept the lid on it afterward to steam it, then kept it simple by adding only salt & pepper.
Not perfect, but not bad either, I'll get another meal out of it tomorrow, so I'm chuffed that Tania didn't bin it.
I figure that if I can rest my shoulder & back for a few more days, I've got a good chance of raiding the supermarket skip again, but this time on a weekday. 😝
I've still got work to do on rescuing the super heated, super crispy critter wings. My first impression was that I was eating burnt matches, that'd been kiln-glazed for a shattering experience.
