How do I insulate and gyorock a patio ceiling

I would like to insulate and Gyprock the underside of my patio roof to create an appealing outdoor area. .

Prior to this what do I use to prevent condensation, in the winter,  from forming on the underneath of the galvanised rafters and corrugated roof sheets.

What to I need to use or do to prevent this prior to the installation of insulation and Gyprock?

Because your patio roof is quite extensive, I suggest having a good look at this discussion - Solved: How to insulate and clad this outdoor patio by @AverageAtBest. If you were to use insulating batts it should prevent condensation from forming on the underside of the corrugated sheets. Condensation forms because warm, moist air comes into contact with a cooler surface, causing the water vapor in the air to cool down and change from a gas into liquid water. Since the surface is no longer exposed and is covered by the batts very minimal condensation should occur.
