Hey Everyone,
I need to replace the valve on these taps, but I'm not sure how to remove the top cover. Would I use a wrench on the bottom part to unscrew that?

That stepped lower cover plate is likely screwed on, and as you've mentioned, a wrench or multi-grip pliers would be the best way to get a firm grip on it. Add a cloth over the fitting before attaching the pliers to prevent them from scratching the cover plate. There's a bit of crud built up in the area, so spritzing it with WD40 before you start wouldn't hurt.
The grey adaptor at the top pulls straight off. It might need some persuasion by placing a large screwdriver under it and using it to lever the fitting upwards.
