I have used acrylic paint to decorate a wooden cheeseboard and was wondering if there was a food safe way for me to protect/seal the design in order for it to be used to put food on and be cleaned after?
There will have to be a bit of a trade off.

Will protect your decorations and be food safe but it isn't made to be used in chopping boards.

Will not do much to protect your decorations but it will give you a food safe chopping board.
I would go for the Cabots product with the understanding that the finish will suffer if knives are used on it to cut cheese.

It's great that you've received excellent advice from @Brad. I totally agree with using the Cabot's 1L Satin Clear Benchtop Timber Finish. This is with the understanding that the cheese is not cut on the board itself. It will provide adequate protection to your design.
However, if you ever decide to make another cheese board, I suggest using an Ozito 30W Wood Burning Kit. It won't be as colourful, but it will withstand being oiled.
