Unfortunately, as portable air conditioners are designed for use in sliding windows where the window can slide up to and close against the cover plate that the hose goes through, there isn't going to be a great way of using it with a hinged door.
Are there any other windows or spots in the room that might work better?
If you absolutely had to use the door, we would need to find a way to lock the door in place, then create a custom cover that blocks any openings around the door. Unfortunately, the only ways I can think of to do this are not going to be easy to remove and replace when the door needs to be opened and closed.
If you were ok with this, then you could wedge the door open slightly using a Rubber Door Wedge, then use insulation tape to attach the existing cover plate to the door, then use a material like sarking with the same insulation tape to hold it in place, and cover the rest of the openings.
