What is the gap like on the hinge side?
There is an old carpenter's technique I've seen used where a Nail Punch is placed in the hinge, and the door is closed to slightly bend the hinges. This will open the gap on the hinge side slightly, which will close the gap on the latch side an equal amount. If you can split the difference so that the gap is even on each side, this wouldn't look too bad.
If you jump on YouTube and look for "bending hinges to adjust door", there should be a few examples of this technique in practice.
Alternatively, you could pack out the hinges, but assuming they are rebated into the jamb, this would make them protrude past the jamb, which can look a bit odd.
