Hi Team,
I have an aquarium stand made out of MDF and melamine/vinyl stickers on top (yes, I know, cheap ones you can buy out there). I'd like to make this splash-proof to extend its life. Inevitably, around aquariums, you have condensation, accidental minor spills, etc.
What sort of product you would recommend for this? Im considering something like https://www.bunnings.com.au/crommelin-1l-exterior-grade-brushable-waterproofer-1l_p0961573?store=819...
as it has some excellent adhesion to various surfaces.

I don't think that is suitable for MDF; we'll see what the team guys say.

Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about sealing MDF.
The Crommelin 1L Exterior Grade Brushable Waterproofer - 1L is rated for use on timber posts and plywood according to the instructions printed at the back, but there is no mention about MDF, and I think the coating will go on in a thick manner. As an alternative, I suggest using Crommelin 1L Flat Aquablock Waterproof Primer Undercoat in combination with Dulux 4L Aquanamel High Gloss White Enamel Paint. This paint is usually used on exterior doors so it can withstand exposure to moisture and accidental spills.
Another option is to use Winton 457 x 457mm White Marble Self Stick Vinyl Tile to give it that stone look. The vinyl tile is waterproof and can withstand a bit of rough treatment as it is rated to be walked on.

Mmmmm Ive had fishtanks for years, and yeah either splashes or leak type splashes lol I would go for either of these options, both with strofoam sheet between them and the glass tank
Metal Mate 0.5 x 600 x 900mm Stucco Aluminium Sheet You could also do a straight bend so it wraps over the side of the mdf, at least the front side.
or cheaper and possibly nicer looking
NuPlastex 137cm x 3m 0.50mm Crystal Clear PVC Film like a tablecloth, gives you an easier edge to work with.

A good solid undercoat, get the timber sealed and protected.
When you use this put plenty on the edges, where you’ve cut. These are like sponges and will cause your project to warp and peel once wet. They’ll act like a sponge when sealing to
finish it off with a good quality paint, one that can be cleaned and wiped, water protection
