Hi there,
we’re trying to figure out how to change the fluorescent batten light in our garage and we can’t figure out how to get the cover off. Any suggestions?

Your third photo shows the end of the light batten with a hole in it. Outside of it, it has symbol of the lock and unlock position. I suggest shinning a light into the hole and see what kind of tool it takes. If for example, it only needs a Philips screwdriver set then that's what you need to use to unlock it. Place the tool inside and turn anti-clockwise to unlock the end of the batten housing fitting. Hold the end plastic body of the batten and place your other hand on the frosty plastic cover. Slide the batten end cover off while supporting the frosty plastic cover.
Once the end has been slid off and light cover has been removed you can then remove the old bulb and replace it with a new one. To re-install the cover simply follow the steps in reverse. My best advice is to bring the old fluorescent tube with you to the store to make sure you get exactly the same one.

As this is an adjustable LED batten light, be prepared that potentially you wont be able to replace the internal tube itself as there may not be one. But instead a series of LED lights in a housing to replicate the look and coverage of the older style fluro.
And the description @EricL has given to use a Phillips head to unlock the end cap is correct. Then you can remove it and then slide the diffuser out to expose whats inside.

@Nailbag is correct and I have similar battens like that in my 'Rainy Day Repairs' crate.
Likely it will have two LED strips with some dead LED's.
