Want to add an undersink water filter and for that I need to remove the shelf under the sink in kitchen. To remove the shelf, I will first need to dismantle the pipe fittings.
The light grey one, as circled in the pics, is very tight. I am afraid if I rotate it in the tightening direction, I might break it. Can you please advise which direction should I rotate it. Looking upwards from the ground surface, clockwise or anti-clockwise.

Welcome to the Bunnings Workshop community, it is fantastic to have you with us.
Generally, screw fittings are loosened by rotating them anticlockwise.
As it is particularly tight, you will want to use a tool such as some multigrip pliers to get a good grasp on the nut. You can wrap the nut in a rag to protect it from damage from the pliers.
